There was a time when in every town where there was a fountain and a place to put a carbon dioxide gas cylinder, there was a soda factory, so that by collecting bottles it was possible to make a detailed map of Spain.
Galicia, Catalonia and especially the Levant were the main producer and consumer markets.
Water, lime or lemon syrup, a touch of sugar...and carbonation. All in a wonderful bottle with a white ceramic stopper and a mechanical spring closure.
In addition to drinking it alone as a soft drink, soda was used to dilute and “lengthen” wine or beer.
In economically weak post-war Spain, this drink was the basis of what we know today as “clara.”
Creative minds came to invent new drinks such as Zuavo, (Suau in Catalonia), consisting of a clever combination of soda, coffee and sugar.
Grandmothers used to prepare it to the delight of the children who watched in amazement as the foam that was generated towards the edge of the glass at high speed.
Of course, my grandmother was my grandmother Doloretes and, in those days, I was amazed by anything…
